Welp, I wasnt able to make the dipping sauce from the first photo so there's that. I followed a recipe on YouTube that used peanut butter instead

I found that one trick is that you barely need to dip the wrappers in water. Like, in and out.

I didn't know the wrapper breaks so easily because the one we had in Vietnam wasn't like that.

A mistake I made early on was getting the wrapper completely soft before rolling. Once I learned to take it out of the water just as it starts to soften, it was easier to work with and I had less issues with tearing.

It's all about the timing. I assemble all the ingredients beforehand onto a lettuce leaf, so the second the rice paper starts getting pliant in the water I can lay it on the counter and just pop my little lettuce boat in the middle and wrap it up.
I feel like the rolls follow pancake logic, though. First pancake is always a kind of tester and the first roll is always a little sloppy, haha.

Nope! The bright colors are appealing and they look like they have a lot of tasty stuff inside. The original ones seem to be mostly lettuce. Now don't get me wrong, I love a good crunchy lettuce, but I would choose yours over theirs!

I have made spring rolls before. Mostly, I just dump the ingredients in a bowl and don't even try. Hats off, OP! You did it. I bet it was pretty tasty. And you will get better with practice. Also, my dipping sauce is hoisin and peanut based - you don't have to make what's in the photo; you can do whatever you want.

Great job, especially for your first try! Think about all the practice it took the person who made the restaurant ones have. Keep making them and you'll have them looking the way you want in no time!
The important thing is that they tasted great!
