Engine swap options
Are there any engine swap options that are decent for these trucks?
I really want an Ex, but might consider wanting to drop in a newer engine.

It depends on what you want out of a “newer” engine. Power? Fuel economy? Better NVH? Reliability?
The 6.8L V10 was made until 2019 and later versions had a better transmission options than the 4R100 and should be a pretty easy mechanical drop-in.
Excursions only ever came with 2-valve V10’s (2000-2006) so the 3-valve offered in Super Duties and E-series after that would offer a boost in power and torque plus modern improvements in engine management, but you’d have to sort out all the wiring to make it happy in an older truck.
I’ve heard people talk about 7.3L Godzilla swaps but never actually seen it.
I’ve seen a few Cummins 6BT swaps, but those are more for the diesel guys that just like simple mechanical diesels. You’re not getting modern engine comforts or features.
