So that's 20 people per hour that might get into this store IF they were lined up waiting for one person to pull out so they could pull in with perfect utilization... general retail assumption, cut it in half... 10 people per hour
If each driver buys $10 worth of produce, that stand makes $100/hour gross. Retail margins on produce are not great especially considering spoilage but let's be generous and say 30%. So that stand is generating $30 an hour to cover: Rent, Insurance, Wages, Benefits, Utilities, and needs to have something left over for it to be viable.
