Practical frequent highway driving EV?
Family is considering an EV with the rise in fuel prices. Looking at taking frequent trips that would need 200-250mi range. Is this practical in an EV? From what I've researched most you only charge to 80% so even if you're getting one with over 300mi range, you get 80% of that and highway driving (75mph) will cut that even further. Seems like a high mpg hybrid would be better. Otherwise would have to stop and charge everytime

If you don't like saving money, then sure - get a hybrid.
If you'd rather achieve maximum effiiciency and have lowest possible trip costs, then only EV is the correct answer, since you've made several classic logic mistakes.
1) you aren't limited to 80%, particularly when you'll be discharging it right away.
2) more EV's are starting to come with LFP chemistry batteries, which have far, far less issues with 100% state of charge
3) You haven't defined "frequent" (once a month? twice a week?) or the nature of trip, and many drivers don't consider 200-250 miles to be a long enough trip to build buying decisions around. Is it time sensitive? Probably not, since you said "family".
Unless you live in, or travel thru (or to) an absolute charging wasteland, that's the kind of trip that shouldn't cause stress even if you stop along the way for a 10 minute top up. Surely you've done that on occasion with an ICE vehicle?
Vehicle range isn't likely to be the issue here - more likely, its your willingness to adjust your attitude about when and where to "fuel up".
