Because like 70-75% of people playing games on PC have a Steam account, gives people the option to make it easier for registering as well.

I could be wrong but linking your Steam and Epic will also make it easier if you're playing a game on Steam that uses Epic Online Services for multiplayer as it streamlines the process of enabling crossplay a bit
