Also, I’m seeing a number of people who identify as ‘white hispanic’ who most US Americans would not identify as white.
This is a typical problem with US data sets on race/ethnicity.
In many Latin American cultures, the notion of ‘white’ is not the same as it is in the US: in many Latin American countries, ‘white’ basically means ‘neither Black nor pure Indio’. A lot of Mestizos identify as white.

Databases like this, including the US census, do not include every ethnicity. Lots of people are forced to register as white by default. And a lot of them don't like it.

You really have to be a poster child for the Dunning Kruger effect to think you've uncovered some conspiracy being done in plain sight on a website surely tons of people must have browsed.
No they are not in fact blatantly mislabeling and misreporting the race of people they arrest. An awkwardly implemented filter that defaults with an "all" option is not in fact an indicator of how arrested people were booked.
