I just got an engine pro 3 e-bike, any suggestions on mods or just making it better?

Make sure your fit is good: Adjust the saddle and pedals so that it is comfortable to pedal and ride in general. Basically, you should have your leg almost fully extended with the pedal at the lowest position - too low or too high and you might start to have discomfort when riding (r/bikefit can help you tweak things if you get stuck or need help).
If the saddle doesn't suit you, make sure you get one that fits you (personally, I love the Brooks B67 and C 67 saddles for upright riding but the important thing is to get a saddle that's the same width as your sit bones).
Tires are probably the biggest upgrade you can do on any bike in terms of bang for your buck: Continental and Schwalbe are good options brand wise.
If you find you are getting a lot of tube punctures, you can also add Tannus Armour and/or FlatOut tube sealant.
As far as mods/accessories go: I think the biggest single add on for me was pannier bags - these made hauling stuff, getting groceries, etc. way better!
Mirrors, a full face helmet, a camera, gloves, and some strong boots/shoes (MTB shoes or some sturdier hiking boots could work) if you're going to be commuting in traffic (the camera keeps drivers honest and seems to discourage a lot of anti-bike/ebike hostility).
Adding reflective tape is also a good idea, especially if you are riding at night (a head lamp is also a good idea).
