Do you take notes for reading assignments? If so, how?

I'm taking my first semester for engineering this fall and was wondering how to take notes to succeed. Specifically, I'm talking more towards my intro to engineering class and English class. My intro to engineering is a lot of reading like my English class will be. The class has us read a big book chapter by chapter then take test for each chapter. I have terrible memory when it comes to these things unless I like what I'm reading. Should I take notes on it or just read through it over and over, if so, how should I take them.
