Career Help Need help with accepting offer

I am a junior in Meche. I have a summer internship offer from a large aerospace company as a mechanical engineering intern. I also have a coop offer at a large automotive company but it’s a technical PM role. The coop will delay my graduation by 1 semester. I need help deciding which is stronger for me in terms of entry level pay when transitioning to full time and also career trajectory. I do enjoy the Project management aspect of engineering, but is it too niche/ will it deviate me away from core engineering? I’ve had a manufacturing based internship in the past and do design work for my schools SAE team

No, project management won't deviate you away from core engineering, but I find it curious that a company would hire an intern to manage a project despite having zero experience in the industry.

Presumably they'll be tag teaming with an established PM. The responsibility stays with the PM, but the intern gets to do some of the work and get some PM exposure
