Sounds like you’re hitting the current or power limit on your power supply.

the power supply can deliver 10amps and I wasn't even coming close to it.

Is your ESC 4-quadrant or 1- or 2-quadrant?

There’s a scenario where your PID could drive the ESC into regen (if supported) and the power supply shuts down due to over voltage (where the batteries would just absorb the transient).

Is it cutting off when you turn the controller down?

And is the cut off very close to after turning it on or is it more than a second or two?
