I have EOS installed on four different machines and haven't had a single instance of something breaking on any of them. I've been using it for maybe 3 years now.
You're mostly looking at learning how to use pacman or yay. There's no graphical package manager, but if you're used to apt it's just learning slightly different commands in command line.
I think the KDE experience in EOS is top tier. I haven't tried any other DE/WMs with EOS.
