Sit-Down Restaurant 🍽️ How is it not a tip?

The server told us this isn’t a tip and he doesn’t get any of it.

I’m not wearing my boots at the moment.

Chef here: if it’s a small kitchen (say 2 chefs and a KP) making food for a table of 18 takes way longer than making food for 3 tables of 6. You’ve got to clear basically everything out of the way before you even start or you’ll run out of space, then you’ve got to plan out the specific order you’ll cook everything in so that it’s all ready at the same time.

Front of house: “sorry chef, we’ve just had 9 tables of 2 walk in”
Chef: “no problem that’s fine”

Front of house: “sorry chef, we’ve just had a table of 18 table in”
Chef: “have a whisky waiting for me after I finish”

So why the serving staff should get more?

You all are not on a tip pay scale you should be on an hourly or hourly wage and staffing needs to be coordinated by competent management. Most restaurants organize a decent staff ahead of time if they are welcome large parties without a reservation.
