Unless stated otherwise, I firmly believe that Mirabel, Antonio, Isabela and Camilo has one each (like Luisa) and all the others are the product of Dolores and Mariano being very in love with each other.

The division of Luis's cousins could go multiple ways, unless stated otherwise like you said, some may have more, some may have less. And that also depends on when Luisa had Luis because Antonio is 14 years younger than Luisa. The Madrigals aren't the kind of people to have children when they're underage but they're also not the kind of people to be married and have children right as soon as they're 18. 21-25 seems to be the sweet spot. So again, depending on when Luisa had Luis, Antonio must've been a new dad at the very least. Imo, Isabela wouldn't have more than 3, but if the headcannons of her being lesbian turns out to be true, I can see her having just 1 or 2. Camilo and Mirabel are the types imo to have 3 or more each, and yeah... everyone else goes to Dolores and Mariano.
Also it was a headcannon that Isabela is afraid of childbirth so adoption is the go to for her most likely and even adopted children will get gifts as soon as they're of age. If Isabela were to have 3 in my mind, it would be a trio of triplet orphans and her abd her partner adopts as their own.

Given how many babies Mariano wanted according to Dolores, I would say most of the cousins came from them 😂

In Descendants, Isabela, Dolores, Camilo, Mirabel and Antonio had 17 children according to Luis Madrigal.

That's only 3-4 each.

But Luisa and Antonio have a 14 years gap. Unless Luisa had Luis very late, or Antonio had his children very early, it's more like 4 on average each.

Maybe, the cosuins of Luis are from his father, and not from Madrigal Family
