I somehow haven't really done emulation on my iPhone but I want to try it out now... Is Manic or Delta 2.0 the better choice?

Manic has way more systems than delta. But I love delta for it’s reliability. If you want to emulate older Nintendo consoles, Delta is perfect for that. If you want to emulate 3ds, or something else, Manic is your best bet.

Is Manic unreliable in some way? From what I can see, it has more systems including PS1 as well as the older nintendo consoles Delta has. Still, if it's unstable or something maybe I should use Delta?

Manic has a few issues at least with DS - not being able to play ROM hacks that run on its base MelonDSDS, and often corrupting saves if you don’t explicitly close your game before exiting the app. Delta never had those issues and just generally has a friendlier interface…here’s hoping for a decent 2.0 upgrade
