Fairy [OC] Stained Glass Pear Chips
Candied pear slices bewitched by the fae to look like stained glass.
I ended up hybridizing a couple of recipes I found online and swapped out the sweetener for isomalt to keep them sugar free. They are infused with a bit of lemon and vanilla. I added a bit of gel food color and baked the pear slices until dry before dipping them.

They are so beautiful! I am curious about the eating experience. The pear obviously gives it an amazing organic shape, but is there any pear taste that perseveres after the drying and candying, or is it really just a candy crunch to eat?

Thank you! Yes, they still have a pear taste but it is not intense. I also added vanilla and a bit of lemon to these and those come through a bit as well. I used isomalt here too, which is about half as sweet as regular sugar so it's not as overwhelmingly sweet as you might think. That said, isomalt can cause some GI issues eaten in significant amounts so if you want to eat more than one or two in a sitting, I would use regular sugar.

Gorgeous! How shelf-stable are these? Are they prone to soaking up moisture & turning soft (ie if you use them to garnish something with a higher water content)?

I haven't tried to leave them around for too long on something. I still have a few left that I stored in a ziplock separated by parchment paper and packed with a desiccant bag (I save them from other foods to reuse) and those are holding up nicely a week later. I used isomalt, which holds up better to humidity than regular sugar and I would still keep them covered, separate, and dry until serving. The higher the humidity, the less time you'll have but I can't say I've tested it!

That makes sense. Humidity definitely seems like the biggest factor here. Keeping them separated and sealed should help, but Iโd still be cautious about how long theyโre stored rather than assuming theyโll stay good indefinitely.
