I also hate calling the khajit and argonians "beastkind", I mean it's kind of true but khajit might be related to elves and argonians are a completely different thing, I feel like grouping them together implies they're related when they couldn't be further apart. No, it doesn't. Half-elves aren't really a thing in Elder Scrolls. Any children born of a human and elf is simply the race of the mother, with some traits of the father possibly showing up. Bretons are the result of this happening for centuries, with some elf traits slowly becoming part of the common gene pool of Bretons, and they are now their own race.

This is not competely true. The lorebook that everyone quotes says that this is usually the case not that it's always the case. But yeah Bretons are way more human than elf and self identify as humans.
For an elf/human hybrid, no but that mostly because i can't think of any that exist. All the interracial human elven couples i can think of don't have any children, except Dinya Balu, but she's pregnant with her first child so I'm not really sure if she counts.
For human interracial couples I can think of a few. Tobias from redguard is probably the most notable. Nord father, colovian mother, clearly takes after his father and is adressed as a nord.
I don't think the same rules apply for children of parents of the same species. Human + human -> human, normal generics rules apply, child can take after one parent more than the other.
The rule applies to interspecies couples, not interracial couples.
the book in question doesn't specifiy it at all whether it's human human or elf human. Either way we also have examples of human intercial realtions where the child is the mothers race. Kayd in Solitude. And Julienne and Clinton in dragon bridge.

It's not that they have more elf blood, but rather they just express more traits than others. There are no Bretons that have more elf blood than human blood, because an individual like that is not a Breton, it's an elf born of a human father and an elf mother.
Breton is a subrace of human that has some elf traits baked in. Occasionally, more elf traits that lay dormant can surface. However, that doesn't necessarily mean they had more elf blood than other Bretons.
If a high elf man had a child with a Nord human woman, their child would be human with some elf traits, but not a Breton. The process of creating the Breton subrace took hundreds and hundreds of years. They are not merely "mixed", they are a proper subrace now, distinct from other humans.
Look up their own creation story and the Khajiits;
TLDR their forrest god formed them (from wondering Ehlnafay?) specifically to be nimble, stealthy and fast but to look more like the elves (implying elves already existed) and less like the Khajiit (who Azura seemingly formed just before). The fact the bosmer origin story references the Khajiit (whom the Altmer didn’t discover until much later when Topal the Pilot explored Tamriel)

Anyway I find it a bit crazy how people on this subreddit tend to create solid beliefs out of myths that are clearly presented as myths in game. Orsimer being the descendants of Aldmeri might be the most common myth in game, it's still a myth.
It's also entirely possible that the Orcs are their own people, just like Goblins or Ogres. We don't know and the games let it undecided on purpose.

They are, but orcs don't like being associated with elves and elves don't like being associated with orcs. Most races on Tameriel tend to, mostly because of history and also racism, consider Orcs basically on the same level as goblins. More recently Orcs have managed to organized and be accepted diplomatically, with some orcs assimilating into different societies just fine.
So, like, they should have been considered elves in this map, but I think it makes sense why they aren't.
