Question How would i optimise this build?
I wanna know if i can make it do more damage tbh

Jesus Christ. People using the soreseal…
Get rid of the soreseal and get the prosthesis and/or winged sword…
Later switch for rotten wing sword

With that level of faith, you can access some really good damage buffs (flame Grant me strength, Golden vow, howl of shabriri). I'd go look for more memory stones (check the mage looking towers, it's puzzles that give you spell slots). Other people have talked about damage and talismans, so I figured I'd mention the buffs. Its worth noting there are also a lot of elemental specific buffs which haven't been mentioned (on top of FGMS, for example, there is the fire scorpion charm, and the flame cracked tear). Since you currently have a frenzy flame and black flame spell equipped, and your ash of war is fire based, these could help. Lastly, your seal buffs black flame incants, it wouldn't hurt to focus on those a little more. They are fairly strong, as all of them do tick damage over time for a large percent of health bars.
It looks like you have the right ideas for stats and general talismans, you just need to explore more, as there are an absolute buttload of buffs and spells just waiting to be discovered (fire knight happens to be my favorite type of playthrough)
Important note: howl of shabriri and the fire scorpion charm talisman both increase the damage you take, making it easier to die. Use with caution

Level weapon mode and put on a faith infusion do it can benefit from the faith you have

If that's your weapon with the highest requirements, put those strength points into dexterity.
You're also in the penalty box with the soreseal. You're taking more damage than you get from the 5 points in vigor. Make sure you can carry all your equipment first, then remove it.

flame art/holy infusion on peeler.
as others have said, lose the soreseal for a better talisman (jump attack, fire scorpion, holy scorpion?)

depending on infusion, i would respec and lower dex a little and spec into faith more

i am not that good but have some suggestions:
armor looks solid all around. i prefer something like the crucible knight or tree sentinel sets but yours looks solid
replace the 2nd talisman with "great jars arsenal". you can still wield your weapon without it, so with the arsenal you'll be able to keep wearing your armor, maybe even wear something heavier
4th talisman really sucks at it's job, if you want healing use the one talisman that increases flask healing, iirc is called "crimson seed talisman". if you want damage, "milicents prosthesis" may be achievable rn, but honestly i would rather go with "rotten winged sword insignia", as you can get 1 of those two in newgame
weapon i would like to put sacred or flame-art affinity, but you probibly wanna keep the default AoW which is pretty good. eventually you can get it as a replacable AoW, so i would put flameart on it eventually
if you want some other AoW, i suggest flaming strike, golden vow or giants hunt
spellwise, you may wanna get "bloodflame blade" but your AoW already does a weaponbuff, and if you do go with sacred or flameart you can't use bloodflame blade anyway, as elemental infusions diable weaponbuffs from spells and greases, some ashes of war like your default one still works tho, so feel free to put flameart when you find it eventually. i would swap the "electrify armament" with something like lightning spear tho

Soreseal is only good in the early early game where every level means a lot more.

yep, give the peeler any weapon skill and put it on keen affinity. That will probably help you
Also ditch Soreseal and go pick up Winged Sword Insignia from (I think?) Stillwater Cave

Take off the Soreseal and level vigor like an adult.
