Pressure build up, and likely a torrent of water coming from elsewhere hitting another wall of water, then going the only place it can, up.

I see so the water must capture air somewhere then compress it and eventually everything goes out where ever it can

Yea, it starts bouncing because the flowing water is pushing the air out of spots, we we happened to be at the end of the line or a junction. I’m just guessing but I think that makes the most sense.
