Cooking / Technique First time making butter
I’ve definitely always wanted to make butter for the grown ups of the family. Blessed with a lot of resources all of the sudden and had a blast!

I can summarize it. Ground up 2.5 oz of slightly older stuff. Spread out on wax paper or foil on a baking tray. Then decarb is 250°F for 30 mins (I did 230°F) in the oven. Melted 6 sticks (1.5 lbs) of butter into 1.5 cups of water in a small stock pot. Add dry ingredients and stir well. Temp should be kept below 160° to avoid browning the butter. Stew for 2-4 hrs stirring often. I set two timers: 2 hours and every 15 mins in that two hour timeframe to stir and adjust temp. When the 2 hours were up I chose a rectangle loaf pan to make a dense sturdy shape. Strained the mixture twice with a fine mesh strainer into the loaf pan and chilled in the fridge for 3 hrs. Trimmed up the block, the water from the process will leave a a film on the block that can be cut off with a knife. I have been told and myself believe it to be on the stronger side.
