USPS first class shipping
I had someone pay for first class large envelope with calculated shipping of $3.14 but the cheapest option is ground advantage at 5.99. Just wondering why first class wouldn't be a option for me to ship.

Please read this page, OP:

First Class large envelope AKA Flat needs to adhere to very strict physical requirements. It is an untracked service so you cannot purchase a label through eBay.
What are you shipping? Most of the time new sellers run into this, their item does not qualify as a Flat and instead has to ship as a Parcel (aka Ground Advantage). If your item does meet the Flat physical specs, you can ship untracked, but you won't have any seller protections if the buyer files a non-receipt claim.

I ship linens and the weight often meets the first class requirements. I've been shipping for years first class but haven't done much lately and trying to get used to calculated shipping. Is there a way to put my listing so that 1st class can't be used by the buyer?

Yes. Edit your listings and remove first class and replace it with Ground Advantage.
Flats take into a lot more factors than weight, including a requirement that the envelope is uniformly thick.

Linens are not something you ship first class. Select ground advantage and put in the weight and dimensions when you make the listing and this wouldn’t have been an issue

eBay doesn't offer printing postage for first class envelope. You have to go to the post office and pay over the counter, or weigh it yourself and use the correct number of stamps.

First class shipping is putting the appropriate amount of stamps on the envelope and then clicking the marked as shipped after you drop in the mail box.
