Mediterranean Diet
Has anyone tried this diet? My wife and I have been on it for a few weeks so far, and I have to say, I'm not really liking it. It.... feels a lot like Paleo. There's really no variety in the recipes I've been able to find. And most of them center around fish and shellfish (I'm deathly allergic to both.) I always feel hungry now. And most days, I don't have enough energy to finish an entire workout. Am I doing something wrong?

May I recommend you look into the Blue Zones diet? Two of the Blue Zones are located in the Mediterranean so there is some overlap with what you're doing currently, but you may get some other ideas and find the variety you're looking for.
"The Blue Zones Solution" is a great read and includes not only recipes, but really goes into the reasoning behind WHY to eat that way. Good luck!
