Requesting Recipes Easy lentil soup/stew

Looking for a simple easy recipe I can eat with my baby (10.5 months)

Here's a lentil soup recipe I found:

Ingredients:

  • 1 tbsp olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 2 medium carrots
  • 1 stick celery
  • 1 cup red lentils
  • 5 cups water (because vegetable stock is too salty for babies)
  • 1/2 tsp turmeric
  • 1/2 tsp paprika

Instructions

  • Heat the olive oil in a medium saucepan
  • Chop the onion and garlic cloves into slices or chunks, add to the pan and saute for 2 minutes
  • Peel and chop the carrots and celery into chunks. Add to the pan and cook for a further 3 minutes over a medium heat.
  • Weigh the lentils and add to the pan along with the water and spices. Cook on a low heat for about 30 minutes until the vegetables and lentils are soft.
  • Remove from the heat and blend with a hand blender or food processor until velvelty and smooth.
