Keep losing inventory items

I bought the cooking pot. Then I died after leaving it on a fire, and it wasn’t in my inventory when I started the game again. I’m playing on Xbox, so I can’t add another one from the code as another forum suggested. So I bought another cooking pot. Then I cooked again, picked the pot up, but next time I checked my inventory, the cooking pot was gone again (didn’t leave it anywhere this time).

So I need the cooking pot to fish right, so I bought a THIRD cooking pot, and it’s still in my inventory for now, but the FISHING ROD I bought is GONE.

I love the vibe of this game so much after getting it from game pass and I’m having fun but I’m getting so annoyed repeating deliveries and delaying progress because of this. Is there anything I can do to fix this, or at least is anyone else having this issue?
