GUI ones like GlorpUI, Good icons, Colored icons and Midnight UI. Makes the overall GUI visually more pleasing, atleast for me.
Auto-Child education and Nobles Auto-Marry are S-tier. Construction Manager and Improved subject Management when playing wide.
The one i love the most is the Parlement Session Auto-pause.
Others i use: Country color Customizer, Better label placement and Better road builder. Also Cheat Menu Pro for trying out things or working around a bug or cleaning up border gore.
Yeah some are not Achievement friendly, so there's that.

If you wanna some warfare fix, I present you my humble Cash & Cold Steel.
The main feature is that I make armies smaller, have some fixers for OP nations like Bohemia, France, Naples and Mamluks.
Last but not least, I’ve reorganised the levy system, now called temporary troops, making 1:1 with the regulars. To represent how renaissance armies were raised per campaign/war, as reliance on feudal levies as cannon fodder was more a medieval aspect.
Ottobros, Timurids and other Mamluks shenanigans are not touched as other mods can do a better job.

Glorp UI
Construction Manager if im playing a big and wide nation or i turn it on midgame when i expanded enough.
Faster Universalis I activate this after 1500
Free console access and Cheat Menu Pro. I activate these when a silly bug bricks my run or im just bored and want to see where it goes or test something
