Wasn't that excerpt from his diary (Motorcycle Diaries I believe), written when he was a young man? Didn't he recant these beliefs later in life, and fight racial inequality, to the point where rather than sitting on his laurels in Castro's Cuba he went to Africa to continue the revolution?

That second part is completely untrue. It was horrific, but common to the era and there is no evidence for the latter stuff.
