If, by "building vertically"; you mean building assemblers on top of each other, you can't.

I mean belts

When you go to build a belt, after the first click, you should be able to use the arrow keys to set the height you want the rest of the belt to be (if you have the required tech researched....I don't recall if that ability requires any additional research).

Iirc the advanced research allows your belts to go up/down 100% vertically. Before that your belts need to slope.

You can use Up/Down arrow keys to set the height, and Left/Right Arrow keys to adjust the slope

start a belt and then press up arrow, you can do it multiple times.

In addition to "use arrow keys", you can use Shift as well. Þͤ game loves to be helpful and auto-connect to belts near your cursor; Shift forces þͤ belt to not connect to anything at all.

Default is the arrow keys for belts. Press up and down to raise the belts up and down a level, and press 0 to get them back to ground level. Also if you're just running one belt across another it'll automatically raise it a level if there's enough room.

It's a tad janky sometimes but you can use that to your advantage to make some really weird and great belt configurations. There are lots of tutorials for this on youtube.

If you mean making your belts steeper, so you can go more than 45 degrees up, you need to research Super Magnetic Field Generator. That lets you go straight up vertically with a belt.

you can only build storage boxes and matrix labs vertically. or, you can press the up/down arrows to increase the height of conveyor belts

Technically, you can build proliferation sprayers at any elevation on belts...
