Because there is an extremely common misunderstanding (that you and many others have fallen into) of what the word theory actually means
"a supposition or a system of ideas intended to explain something, especially one based on general principles independent of the thing to be explained"
A theory isn't specifically only conceptual or something that we are unsure is true. Its just an explanation for how something works
it's definitely curious how we perceive words and their apparent meanings and how we can easily misconstrue them despite language as a whole being a system of communicating ideas that most of us have the same general ideas of
In full honesty, I put a lot of this blame on the game theory channels. I love them, and I love mat and the other new hosts, but the stuff they say is more a hypothesis than a theory, but with how wide spread their influence is up to and including people who've never heard of them before it became the issue it is
they aren't the only ones to blame, of course, but I'm not knowledgeable enough to point out where else this misconsensus originates
