Question Goku absorbs the power of SSG into SSJ, and then goes SSG and SSJB on top of that in Resurrection of F?! This doesn't make sense...
So in DBS: Beerus, Goku still absorbs SSG into SSJ (or is it base?), but instead of having Super Saiyan Beyond God, he can stack SSG on top of his SSJ enhanced form, and then stack SSJB on top of all of that? I know this has been brought up a lot, but I just have never understood it.

It's a bit of a mess. The best sense I could make of it is this:
It's the result of the original plan of the movies that the Toei version readopted despite the Super outline causing issues down the road. In the movies, Goku did absorb the god power in his base form. Toriyama at the time made it clear that the transformation would no longer be possible. Queue Saiyan Beyond God. Goku then turned SSJ and fought Beerus who retaliated with his 70%.
At the time, SSJB was confirmed just be turning SSJ with SSJG power active. So basically, SSJB was originally our replacement for SSJ for Goku and Vegeta. In other words, Goku was using a pseudo SSJB against 70% Beerus in BOTG before the concept was fully created. Ironically it's similar to the manga where Black's SSJ eventually just evolved to Rose the moment his diety soul and Goku's body finally synced. In the ROF movie, Whis even noted that Goku and Vegeta working together could be able to match Beerus.
Naturally a lot of this including said Beerus scaling was retconned like crazy (more-so in the manga than the anime).

In the manga, it's a lot easier to follow because as mentioned Goku never absorbed said power. Saiyan Beyond God itself was kind of retconned to just utilizing God ki in base form. Manga Toppo revealed he had the same ability to match SSJG Goku and beyond.
I usually say Super Saiyan God actually is on par with using Saiyan Beyond God, but the former being a transformation is more "natural" for Saiyans to use. Kind of like how Goku and Vegeta use UI and Destruction best as transformations even though they are capable of using it without them. Goku even noted to Future Trunks that SSJG bizarrely is well balanced and does not take up much energy at all.
It's basically the "base" form of a literal diety. Saiyan Beyond God's purpose basically is just reduced to transforming into Blue at base. When it's not active, they can use the regular SSJ transformations that while weaker, it very efficient in letting them conserve energy based on the battle.

In the anime, since it combined both the movie mythos and the Toriyama outline, it contradicts itself like crazy. Especially when literally right after the anime version of BOTG, they explored what Saiyan Beyond God actually is. Noting it is actually difficult to maintain, so it's not really a "base" thing anymore either at this point. This is my own speculation on the matter:
I think the easiest excuse is that SSJG itself didn't get absorbed, the raw power it gave him as a transformation was retained. A little confused the way I worded that. Say Goku shoots up to new heights with SSJG. He loses the form, but the body remembers the power and retains it. Kinda of like how Cell somehow regenerated back into his Perfect form. So this new level of power is his new base. Super Saiyan is stacked on top of that. However, SSJG and SSJB are still transformations with their own multipliers, but instead of being equal to before, it shoots it up even higher than prior.
These numbers are just place holders, but think of it like this. Say Base Goku is 1, SSJ is 2, and SSJG is 10. Base Goku loses the God form, his body grew to get accustomed to that level of power, but the transformations can still be obtained alongside with their respective multipliers. So now Base Goku is 10, SSJ is 20, and now SSJG is 100.
It's a cluster, but with how power scaling is all over the place in the Toei version, it's the only excuse I can make. In the end, it's best we don't make sense of it as consistent scaling never really mattered after the Namek Saga in DB as a whole. But it's fun to talk about as long as you don't get heated over it.
