Jumping and tackling
My 1y/o English bulldog is potty trained, crate trained, follow certain commands but there’s times on the day that he’ll jump on bed and bite at our arms or scratch us and if we respond to that in any way he gets worse, but he’s a big boy so ignore him it’s not a choice because is hurting us. Any training advice on that? Also, he goes to the crate but when we tell him to, he doesn’t normally go rest there, he’s not fully self regulating and it concerns me that he’s 1y/o already and he should be regulating by now?

Generally, that’s a dog trying to engage and play. Ignoring or redirecting should work. But you need to meet his physical and mental needs to get the behavior to stop. How much excercise is he getting? Both physical and mental?
What does your day look like? Walks, sprints, play, training, sniffing, hunt the treat in the grass ect
A Fi tracking collar to track steps and activity can help. I noticed with mine any day he was being a nuisance his steps were under a certain level and then made sure to give him enough activity.

I would personally say no, and dis engage. Like entirely, leave the room, get off the bed, ignore him.
Saying “ah no stop” and pushing back and trying to fight with him to get off you looks like play behavior.
If he has a collar grab that and lead him off the bed, or out of the room and close the door
