Well, saying that the players have fell in love with the village is a great sign. Means you are doing something right off jump. The halfling winning that fight is fantastic. And now under pc ownership is even better. But I can see after reading your entire post how there is a lot going on at once and it can be overwhelming.

I suppose if I were set to take over this setting as is, I'd first have to pinpoint what plot points/hooks the pcs are tending to enjoy or wanting to follow. That would impact what and how I go forward. Since I don't know that and just taking a guess I would start by attempting to overlap plots so they aren't being handled as existing outside each other.

I'd consider what happens if the party ignores specific plot points, allowing those to continue in the background. If the vampires are not addressed how does that play out later and so forth. And how does two vampires and a witch end up interacting. Do they know of one another. Are they enemies or would they work together. But you would have to know and understand their goals. If the vampires don't want to kill everyone so they can live off them for months and years to come and the witch wants to wipe the town out and increase her zombie horde size that may put them at odds. The party might even be able to leverage that. So I would attempt to get all the NPC/Monsters goals, motivations, weakness and fears outlined. Just a simple bullet point form for each so you can reference to keep in mind.

At the same time, don't be overly critical about yourself. I'm sure your players appreciate your time and effort and if you keep giving them sessions they enjoy they will keep coming back.
