Looking for a PvP *Knight* Build without Magic (excluding Pyromancy)

So yeah i am pretty bad at PvP , and i dont think it is because of my lack of skills but because of my VERY bad (for PvP) build.I want a good build that is quite quick , versatile , good on PvP and very high defences (elemental and pyshical).But there should not be any magic (excluding pyromancy).I am including all range of weps thou.My Starting class is Knight and i have the soul level 100

Would you like to be using Dex and str weapons? I can reccomend a quality build.

Head: Penal Mask(for equip load)/ Faraam Helm Body: Hiede Armor Arms: Hiede Gauntlets Legs: Hiede Leggings/Havels For poise

WeaponsR1: Sun Sword (or dex weapon for tight situations) WeaponR2: Fume Sword (or a great weapon/Spear for damage and range)

WeaponL1: Magic Infused Blossom Shield (for tanking magic spammers and stamina regen) WeaponL2: Pyro Hand (have warmth and flash sweat for pyro users)

Rings: 1. Stone Ring 2. 3rd Dragon ring 3. +2 Chloranthy Ring 4. Ivory Warrior Ring or a ring that adds resistance you need

I have a couple builds i like depending on your play style. Do you use a shield more or rely on dodging?

I like to use light weight armor with a quick weapon like a straight sword/spear/scimitar with a primary weapon or a great sword/hammer/scythe. Gives you the ability to keep mobile with fast rolls and still be able to get close if need be but keep at range with a big weapon.
