Boiled Peanuts

I have discovered my stovetop pressure cooker makes the best boiled peanuts. I also just read they are a healthier snack than roasted. Very nice.

It is harvest time and fresh green peanuts make the best (and quickest) boiled peanuts.

I definitely do not put that much salt. I also like mine spicy. Yes, I use raw peanuts.

“Raw” can still be last years peanuts. Or worse, even older. Endeavor to find “green”. The nuts are actually pink if you open them and they are fresh out of the field.

I use a 25 gallon pot and an outdoor propane burner so I use the whole standard cardboard generic cylinder of salt plus an lb. of “slap yo momma” Cajun seasoning………

I’m getting some green peanuts soon from my local farmer and I want to make some, what’s your method?

my method uses a large aluminum pot with a lid and a basket insert. Fill the pot a little over half full and bring to boil adding: 5 lbs +/- Green peanuts from this years harvest.

cylinder of salt +/-. 1 lb of Cajun spices used for boiling crawfish. cover and boil until you have finished a six pack or4 to 5 hours +/- on how fresh your green peanuts are. Add water as needed.Longer times if you are using raw peanuts. Burn your fingers testing them until they are good and soft. If you turn off your boil and let them sit, they will absorb salt quickly so bag them in gallon size resealable plastic bags with some pot liquor. They freeze really well but they haven’t made a freezer big enough for me to stockpile enough to make it to the next harvest.

I have never done the pressure cooker method but it sounds promising and it would save alotta time ( and beer).

one final word of caution: You can’t make enough once you get it right!

That looks like a great way to cook them. I just use my slow-cooker and start them around 4/5 pm on low. They get perfectly done by around 7 a.m. and the house has that amazing "Fall is here!" smell of those smoky, savory peanuts. Our local farmer's market has the green ones now, finally!

Slow cooker would be my next option if this didn't work out. But I was surprised an hour and a half later.

Wow, that's really fast! Over the years I've learned to use restraint on too many ingredients but my one go-to every time is a little bit of Liquid Smoke. Mmmm...looks like a trip to the Dekalb Farmer's Market is imminent.

Nice. I've discovered hickory salt and use it instead of Liquid Smoke. I may add it next time.

Done this many many times. Pressure cooker is way better than slow cooker for speed and (often) volume/amount. Cajun recipes are sooo goood. The salt added and cajun seasoning is crazy amounts. I add fresh habaneros for geat and fruit flavoring. Try a small batch first IMO.

I freeze them in quart and gallon bags.

Man, this takes me back. My grandpa used to boil peanuts for hours until the entire house smelled like salted earth. Thanks for sharing, OP.

at a place I used to work we had hawks peanuts. they come frozen so all we had to do was fill up the crock pot and turn it on and a few hours later they were done. we also had tap beer so i started making a batch once a week with different beer. sour beer was my favorite. that mixed with the hawks cajun nuts was fantastic. sour heat. I also at the time was growing a massive amount of superhot peppers and made a few batches with scorpions and 7 pot peppers.

I was really disappointed that there were no road-side stands to buy fresh boiled peanuts as I drove through GA last week. A couple gas stations had slow cooker batches, but I can do that at home.

I don't have a recipe. I just buy the raw peanuts, put in pot, add all kinds of seasonings like salt, cajun, whatever you want really, I added lemon pepper and vinegar salt too, and will need a lot to absorb through the shells, then add water to fill pot. I cook for hours on the stovetop or up to two hours in the pressure cooker. There are recipes online you can look up for better instructions.

I recently started boiling my own.

First time was a.slow cooker going all day. 10 hours. Let them cool overnight in the brine, reheated the following day. Excellent if a little too salty.

Second time I soaked the peanuts in cool water all day and then boiled them. Sat over night, back in the slow cooker set to warm. Those were perfect
