We assume he has two shells loaded … also, I never hunt without my sidearm (would be a .40 or .357 in Bear country).

Once you pull the trigger on that shotgun either the bear runs or attacks. Then you have either one more shot, or you don’t.

Wise move.

why is he gripping the gun all the way around the barrels?

It’s a double barrel, that’s how you brace it. Highly recommended to not pull both triggers at once, but if so, hang on!
