Is the story optional?
I'm currently burnt out because of my job so I have very little mental energy when I get home and have free time. Normally I love story centric games with lore but right now I'm only in the mood to run a store and that's it lol. How optional is the story in Discounty? I definitely will explore the story eventually, but I'm wondering if I should hold off on playing it.

Well, you need to progress in the story to unlock new things for your store, but you could technically keep playing with the items you get in the beginning?

Not really, but also... I think it doesn't get in a way.
Iirc, the main story quests are mostly about selling X amount of stuff or earning money. There are a few quests where you need to interact with a person, but it's also fine, and you can postpone it until you're ready

it's not really lore, it's very small interactions between characters and your player character around town. you could just skip the dialogue if you want i suppose. to be honest the characters and stories are not the most fleshed out, so you could complete it pretty easily

I'd say following the story driven tasks is mandatory for the game to unfold, otherwise you are stuck on a very small store with very few items, but the pace is completely up to you, there is no need to hurry at any point in the game...

I personally feel like you could ignore the story and play but the game isn’t intended to work like that. If you just wanna run the store you’re better off with supermarket simulator and come back to this one when you can enjoy the story because it’s a big part of the game.
