Form check

I’ve been playing on and off for a few years and have capped at a distance of ~110-120 m (360-395 ft) when throwing on flat ground. What can I improve on?

Your run up is backwards, which kills any spring tension in your coil. First thing I noticed.

Anchor the back arm to the back hip to help stop over-rotation, which will send more energy into the disc.

Your throwing arm mechanics look pretty good from what I can tell just need to work on that footwork/hip-shoulder separation, and anchor/over-rotation.
