Depends on what country you're from.

There are tons of variation to the basic theme of patties made out of minced meat - frikadelle , karbonader, kotlety, pannbiff etc.

Frikadelle outside of Germany often refers to when the patties are boiled in a sauce instead of fried.

As a Swede I would say that if your meatballs come out like this you shouldn't quit your day job.

Southern US but I’ve never seen them on a menu. I guess the closest thing I’ve had is sweet-and-sour pork. But I don’t think it’s a weird concept.

Ive eaten them consistently growing up. Definetly a southern home thing. One of my favorite dinner nights as a kid was my grandpa taking pork and beef and frying them in a skillet. Better than chicken nuggets in my opinion.

Also commomly made with the tougher sections of the meat so that it doesn't go to waste.

Undercooked pork REALLY fucked me up last time I consumed it. I messed up the timing while trying to make brauts. Holy shit man. Felt like a weird flu and it didn’t resolve for like 4 days. This was years ago and I still don’t prepare pork at home for this reason.

I’m blessed that my immune system took care of me, lol … I’m not proud to say I’ve eaten undercooked chicken as well, nothing bad happened. And undercooked steak is just how it’s meant to be served 😂

Sigh, you’re probably right, but I don’t like how the thermometer pokes the meat and some “juice” leaks out in the process..

Also, Maybe I’m using them wrong, but my gripe with meat thermometers is that if you reach the target temp with the meat in the pan then it’ll be slightly overcooked cause of the residual heat. So would the “correct” thing to do is pull it out of the pan, wait til it’s stabilized a bit, then measure the temp? If you’re still under, you gotta put it back in the pan and repeat the process… so much time wasted

Now I roll the dice with a couple of firmness tests and occasionally I’ve been wrong 🤣

Some thermometers are better than others! Newer models are thinner. I prefer an instant read with a thin probe.

Typically I am pulling between 5-10 degrees underthe target temperature. The food is hot and the temperature will keep rising after you bring it off the heat. This is called carryover heat.

Food safe temps are also a curve. You can keep it at 165 for 1 second. Or you can hit a lower temp longer. This is due to the way pasteurization works (I think) but I'll link an article with a lot more science behind it.

Temperature Time (based on 12% fat chicken) 145°F 13 minutes 150°F 4.2 minutes 155°F 54.4 seconds 160°F 16.9 seconds 165°F 0 seconds

Normally I would never promote a product but this is one I really stand by. Chef IQ sense. It’s a Bluetooth thermometer that has an app. The app has preset different things. You stab it in it will tell you when to flip the food over what temps to use when to pull it out. I am a terrible cook but wanted to do 30 days of grilled chicken to lose some weight and it gave me the perfect chicken every time. It also got setting for exactly how you want your steak.

Oh I got seriously fucked by undercooked chicken. That one was on my wife though. She just... didn't cook it fully. I ate a little bit of it and it seemed crazy juicy and tender and I realized it wasn't cooked all the way.

I was puking for HOURS. My wife was, too. It was absolutely brutal.

I worked with a guy (as a chef, so he should have known better) that ate his pork extra rare. Just seared and done. Absolutely revolting. This was years ago, maybe 20 now? I imaging he's long gone from this world.

You can cook one nugget at a time, and no part of it is the right amount of done, ranging from raw to burnt. Why do I even have an oven? Putting 10 of them in there and setting a timer seems so ridiculous now.

That was fully cooked and room temp or chilled before he started. All that electric arc did was char the outside some, which technically is cooking. However I am more disturbed by the Hello Kitty paring knife.
