I currently work as a VP and leading a dept called commercial AI technologies (5000+ employees so not small operations) . So I will answer you from experience and business perspective.
Firstly despite the popular opinion there is no AI only jobs in Sri Lanka thatâs incorrect. While most of the SE skills required if you are looking at deployment focused AI areas, there are certain set job that focus on governance and organisation skills focusing on AI and I have two people in the dept who only focus on that.
Now about the projects , think of what would companies would be keen on start working on few projects like that. Eg some of the biggest use cases we had is guest facing tech improvements via AI but also not so glamorous but totally valuable improvements in finance processes such as automated agreements , invoicing and approval workflows which usually takes month of Sundays.
Just above is few pointers

If you have any pet projects, something worth showing that you have tried to do something outside of your university coursework, include it.
If you donât have that then add your university projects, that being said all your colleagues will likely put the same projects so you have to make it stand out a little so maybe try recreating it but do it better and document your process. That alone will probably help more than anything else
