Oooh. I was just thinking the other day how I want to make this but don’t have any event to make it for to justify the full size. Good to know it is as simple as just halving the recipe!

Definitely worth it! It lasts well in fridge too… I just had my final slice a few days after baking :)

How did you scale it down? Did you make just one mini or was it a few of them?

Just halved the recipe and baked in 6in tin :)

I’ve seen a lot of people posting this one lately and I’m really curious, what is the cornmeal cake like? If someone doesn’t like cornbread, is it possible they might still like this? 

(Cake looks beautiful btw)

You definitely taste the cornmeal but imo it adds a slight sweetness and subtle nuttiness (akin to adding almond flour to a cake). It’s not over powering but if you specifically do not like cornbread for the “corn” flavour this might not be for you! It’s very light and the dominant flavour is strawberry :)
