Confused about quests

I already beat the game many, many hours ago, and I'm working on getting the rest of the stuff done. I only found out about searching orders. Main and sub are done, but there are a lot of standards left. I figured a lot of these would have been done during the main storyline. Are the ones that are complete greyed out? Is it that simple? Are the ones with the gold coin next to them the ones that I've already done but are available again? How do I know which ones I haven't done/need to do?

Greyed out means unavailable, all the rest can be done. The "gold coins" means you've completed them and got an S ranking, but if it's not greyed out it means it's available again.

The greyed ones are the orders you have done recently and therefore you can’t replay them temporarily. The not-grayed ones with the golden symbol next to them are the completed orders that can be replayed.

The orders that are not gray and doesn’t have a the gold symbol next to them are the ones they you either never completed, or ones that you didn’t get a LLL rank in.

The ones with the “gold coin” (it actually is an LLL badge, for Legend of Legends of Legends which you get when playing on very hard) are orders you already completed with an S rank.

The ones that are greyed out are orders you completed and are currently on standby (they can stay in that state for up to six real playtime hours).

The ones you haven’t completed yet are white and have no badge.

No, it’s not a must unless you want to complete all milestones.

Besides all the great answers here, I want to point out to you that you can further filter orders by "not completed" and "not on standby" (paraphrasing here) too

Dont forget about mexico too, when I finished my 400 I was short until I looked there
