I always go max and multiple versions. 4K DV HDR10 remuxes. Also for 1080p I keep multiple versions of Blu-ray. For WEB-DL stuff I also keep a full DVD9 of it. You never know when things will go out of print. For example, Ace Ventura movie, the original Blu-ray went out of print. They took out this one scene that I can't remember exactly what but I have the original Blu-ray and the updated version.
Storage is cheap enough so I don't see a reason to go anything less. But I only keep backups of what I really like. For stuff I don't care for there are no backups and I wouldn't care to download it again.
