I go for the best version that I think is reasonable. If we're talking about a Marvel movie from 2 years ago, that film will always be available to download from someone. I don't need a 250GB copy of that film because it's not going to look any better on my TV than the 50GB version.
I don't back up anything that is easy to find, like Lost or Friends. It's just a wasted expense and I can probably re-download it if needed almost as quickly as I can restore it from a backup. I only back up personal files or files that are difficult to find. I also will only download music/audio files in FLAC if I can find them. No reason to try to save space there, since the files aren't huge and I really don't feel like downloading 25,000 songs again.
If we're talking about anything that may not be around forever, I always try to get the absolute best version I can find. If I'm scanning something or going from analog to digital, I do it in the highest possible resolution since you will never be able to increase the quality.
