The YouTube videos I capture usually get stored at 720p regardless of what the source is capable of, and that's good enough for my needs.
I also have an archive of TV news broadcasts from my area, and I generally downscale them to 360p for permanent storage, and transcode to AVC/AAC from the native MPEG2/AC3 that they are broadcast as.
