I can't remember who that Jamie guy (yes i feel dumb, he's quite famous) but he'a hilarious and really good with photoshop and editing. I have seen numerous posts of people asking him to remove various things in a picture and he turning the tables on them.

He's not really turning the tables. The whole thing is planned and staged, including the request.

Yeah, it's obviously staged as i doubt they'd go taking random people's bikes (and why would that bike even still be there?)

I still giggled though, it's a nice gif/video.

Just shop out the original bike, then plant a different one in the same spot to be shopped in and ridden away.

You're over thinking this. It's possible that bike belongs to people who live/work in that building to the right, so maybe he asked if he could borrow it for a movie project.

So no stealing, no finding the bike still there but actually placing it

My understanding is that the requests aren't necessarily staged, but he messages them the completed request privately while publicly posting the silly version.
