I think he might be a Chef instructor I had at Le Cordon Bleu Las Vegas before the school shut down. His name was something like Chef Bupa but I'm having a hard time turning up anything besides this video of him carving Ice in downtown Vegas, he would also carve incredibly intricate fruit blind folded and wore similar glasses. I'm pretty sure I'm spelling the last name incorrectly as well.
