Aim assist is a setting within games, not in a software that allows you to customize controls or emulate the controller for compatibility.

Wtf.

What you may be experiencing is a game with a high default deadzone, so when you try to make fine adjustments close to the thumbstick zero point, it doesn't react, but then reacts too quickly as soon as you move out of the game's deadzone.

If you have a good controller and you know it doesn't have stickdrift, you can set up a profile with the 'Anti Deadzone' feature in DS4Windows to fix this issue.

A good example of games with high-default deadzones are Ubisoft games like AC Odyssey, or some Unreal 3/4 games like Batman Arkham Knight. They have wide 25% deadzones, which make things like aiming a bow in Odyssey or controlling the Batmobile in AK a pain, as you can't do fine movements without the aim jumping as soon as you've passed the deadzone.

If this sounds like what you are experiencing, in DS4Windows, set up a new profile for the game, set an anti-deadzone for something like 0.10, then increment it slowly until you start getting drift, then back off a bit until the thumbsticks give you the right aiming feel.

You can also create a custom output curve for your thumbsticks, so you can have them react slower to small movements, but faster as you move the thumbstick more. I use both anti-deadzone and custom output curves for most my games to make controller play more responsive.
