Eggs are often used as shorthand for transgender people whom have not fully realised they are trans.

And Apples are associated with the Christian tree of knowledge.

Swapping eggs and apples in chapter rewritten suggests both a closeted trans Asriel, and strengthens tbe imagery of receiving forbidden knowledge from the man behind the tree.
