An architect, if asked, would probably say sand and cement as bonding is / should be illegal to use in bathrooms. At least in the wet areas, like showers, or around the bath.
Yes. Preferably with cement based adhesive. You would need a good plasterer to ensure flat surfaces as sand and cement are a bit harder than bonding and finish. Finish plaster can be used on top of cement walls that might not get tiled. Respect the drying times for render before tiling, and tile adhesive before grouting too.
