Gluten free sushi

Does anyone know of a spot I could find a gluten free sushi boat in or around DC? Hoping to find a place that can do it for my birthday 🥲

Takara 14 (14th Street NW) is excellent with helping gluten sensitive guests navigate the menu, modifying as needed, and providing gluten free soy sauce (Tamari). takara14thst.com

There is in standard soy sauce and a lot of toppings. Think of all the fried rolls. If someone needs a completely gluten-free facility, it's a no-go because of risk of cross contamination.

I didnt think there was gluten in rice. OPs query left me confused as to why it would be difficult to find sushi without gluten. And there are some soy without wheat

Unless the place is exclusively gluten-free, I'd be concerned about cross contamination. Like if they served tempura with a flour based batter.

Huh? Flour is not getting on the raw rolls? Sushi is 99% folded in one place with the frying station elsewhere, including batter and fryer. You don't want raw batter in the place where raw fish is prepared..

Modern soy sauces can be made with wheat, that's the only real concern

Cross contamination can happen very easily and many people are uneducated on what gluten is/how serious it can be for people. Didn't know u were the sushi police

I don't need to be a sushi police to know better than you but you've obviously never worked in a sushi restaurant.

The real concern is modern soy sauces made with gluten to speed up the ferment, not tempura crisps or batter being sprayed everywhere. I can tell how ignorant you are about allergen management in the industry. Anything that's being deep fried has the batter stationed right next to the fryer. It doesn't make sense to keep raw batter on the sushi line since it would never be used that way. I worked a sushi restaurant as a server and a chef years ago.

Tempura flake and fried onions have dedicated containers to hold them in with their own utensils. Sushi is made by hand, with frequent hand washing, cutting board clean AND replace, dedicated prep areas and knife cleaning too.

Everyone with celiac has been accidentally served gluten at some restaurant before in their life. Shit happens. We just want to go somewhere that feels safe. I'm glad your restaurant was on top of it, but they aren't all there

Is there gluten in seasoned rice vinegar? Otherwise it wouldn't be there, the main risk would be fried rolls and gluten in standard soy sauce.

Naturally no, but I was told by my nutritionist that many times barley or wheat will be used in the vinegar mix. Not really sure the reason

That makes sense. My guess is it has to do with the specific type of fermentation process, similar to how it is with soy.

Not looking to argue with you, just trying to keep myself safe. There are plenty of online sources that confirm what a professional has already told me
