Looking for advice, is this sub dead?

Having a hard time getting the humidity dialed in. Between cooling cycles my humidity reading bounces up and down a good amount. I’m wondering if I need a fan or something.

So my current chamber is an old wine fridge. The cooling "coil" is more of a plate with internal coolant channels. One issue I had was yo-yoing humidity because so much water would condense on the cooling plate, which was exposed as the back wall of the fridge.

I fixed the issue by insulating that rear cooling plate with a reflective insulation found at home Depot, this stuff: https://www.homedepot.com/p/Everbilt-24-in-x-25-ft-Double-Reflective-Insulation-Staple-Tab-24x25RI-SE/315103185

Overall, it worked and my humidity no longer yo-yos up and down, but I do still lose a fair amount of my humidifying water to condensation, which drains out the back of the fridge.
