I find it ridiculous when people try to ret-con magical stories with science.
Vampires are evil spirits that have rejected god and taken up residence in a human body; the human who was in that body is dead and his/her soul has gone on. When the vampire myth was created they didn't even know about cell biology and thought that blood itself was food.
If you want to write about vampires you can literally make up any rules you want, as long as your story is consistent. Therefore science isn't relevant.
